Whenever I write a post concerning healthy eating, you often suggest that you simply don’t have time to eat healthy because of your work or school schedule. Today I’ve prepared 5 ideas for a healthy, nutritious and tasty lunch.
1. Wholegrain sandwich
A sandwich doesn’t need to be boring or fattening. You only need to pick the right bread and the additional ingredients. Buy (or even better – bake!) a wholegrain bread, add turkey cold cut or grilled chicken breast, as well as some other ingredients: tomato, arugula, cucumber, sprouts, pepper, raddish, cottage cheese… – it’s all up to you. I guarantee you that such a sandwich will make you feed your hunger and it will definitely not be boring.
- Wholemeal tortilla wraps
A tortilla doesn’t have to be a stodgy fastfood dish, as long as you prepare it yourself and take care of adding the right ingredients. Of course, I’m not saying you have to bake the tortilla yourself (but if you want to, here’s a recipe), but you could look around the store and find a wholemeal tortilla. Wrap the tortilla with cottage cheese, vegetables, avocado paste or hummus. You can also prepare a more traditional version with grilled chicken breast, salad, tomato, cucumber and pepper. Try to avoid the ready-made dressings which are often added to tortilla packages, because they tend to be highly caloric.
- Muesli and yoghurt
Here’s an option for those of you who are on a diet and don’t look for a very satiating meal. Pick a yoghurt that’s natural and has a good ingredient list. The fruity yoghurts you can often find in the shop are usually filled with sugar and preservatives. Add some fruit, wholegrain cereal and muesli to a natural yoghurt. You can also add a tablespoon of honey. Yum!
- Cottage cheese
The cottage cheese alone may become a boring lunch at some point. Consider adding some nuts, pumpkin seeds, sunflower seeds, dried tomatoes and olives.
- Salad
A salad can be very healthy and quick to prepare so it’s a great lunch idea for those of us who are really busy. Try some of these combinations: salad mix (arugula, rapunzel, lettuce), grilled chicken breast, cherry tomatoes, cucumber + a light dressing or a natural yoghurt. You can actually add anything that’s in your fridge or anything you like at all – as long as it’s healthy and filling :)
